The Chorizo is a cured sausage made from pork meat. It is made with ground meat marinated with spices; the most characteristic is the paprika, which is the most distinctive element of chorizo over other sausage. The skin is usually pork belly or lamb. The "salchichon" is made with lean pork and bacon, and black pepper (which may be ground or not), salt, grated nutmeg and coriander.
