On the slopes of Mount Urnobitza in the town of Elgoibar there is the MAUSITXA farmhouse, a place where sheep graze and where make the cheese with Designation of Origin "Idiazabal". It is a family dairy with a long tradition in the world of sheep and cheese. With a flock of 750 sheep latxa with black face, get the two raw materials to produce the highest quality cheese: milk and natural rennet. 

To produce this precious cheese, we combine tradition and new technologies to improve the product, always with the best milk and treating their latxa sheep in the most natural way. 

Also belong to the association of pastors Zumitz, where undergoes part of its production to a rigorous system of organoleptic tasting; expert committees of Protected Designation of Origin "Idiazabal" require for these cheeses scores much higher than the usual average ratings for the rest of the production . The result is two types of cheese: Laxta Gazta, supreme quality, and Zumitz.

These cheeses, with a minimum 3 month healing, are sold vacuum-packed, in a special and differential package that also includes a certificate of quality. Limited production.
